Pizza De Verduras Asadas via Spain



¿A quién no le gusta la pizza?
La pizza de hoy es una de esas sanotas, con verduritas asadas en el horno bien despacito, que con una buena ensalada nos "apañan" una comida o una cena.


INGREDIENTES: (2 pizzas medianas)
- 300g de harina de fuerza
- 200g de agua templada
- 1/2 cta. de sal
- 1 sobre de levadura seca de panadero
- 1/2 calabacín
- 1/2 berenjena
- 1/2 pimiento rojo
- 1/2 pimiento amarillo
- 1/2 cebolla
- Queso parmesano
- 4cdas. salsa de tomate casera


PREPARACIÓN:
Para la masa: Hacemos un volcán con la harina, la levadura y la sal. Añadimos el aceite y mezclamos un poco. Incorporamos el agua poco a poco mientras vamos amasando hasta obtener una masa lisa.
Metemos en un bol la masa y tapamos con papel film, dejamos repasar durante 45minutos o hasta que doble de volumen.
Separamos la masa en dos y estiramos cada parte con el rodillo hasta darle la forma que deseemos.
Las colocamos sobre la bandeja del horno y dejamos que repose otros 10 minutos.

Verduras: Cortamos en cuartos las verduras, salamos y rociamos con aceite. Horneamos a 200º hasta que las verduras estén hechas. Dejamos que enfrien un poco, quitamos la piel a los pimientos y cortamos las verduras en tiras.

Ponemos un poco de salsa de tomate sobre la masa, las verduras encima y abundante parmesano rallado. Horneamos a 200º hasta que tengamos una pizza dorada y apetitosa...

Crisp Goat Cheese And Turkish Coffee Canapes




Ingredients:

300 gr. goat cheese
Peel of 1 lemon finely grated
Oregano leaves from 2 stalks of mountain oregano
2 spoonfuls honey
1 small bottle sparkling spring water
1 spoonful Turkish coffee
90 gr. flour
10 slices baguette (1 cm thick)
Preparation:

Knead together the cheese, lemon peel, oregano and honey.
Toast the baguette slices in the oven and spread the cheese mixture on each piece.
Mix the flour and coffee and add the spring water gradually.
Heat some oil in a fryer and when very hot add the floury water drop by drop and fry until it is a golden color. Remove from heat and sprinkle it over the cheese mixture.

Chicken Breasts with Strawberry Avocado Salsa










You will love this recipe, as this is the closest to the one I make every week.
Though I use Dash as the seasoning, with olive oil only on the chicken. 
This is what I fix for guests, and friends. I even cooked my chicken to my sister
 and to this day I think they call it Lynn's Chicken. I try to find recipes as close as
 possible as the ones I make for my healthy lifestyle. 


Chicken Breasts with Strawberry Avocado Salsa

4 chicken breasts
2 ripe avocados
Driscoll’s strawberries 250 grams
1 clove of garlic
1/2 red pepper, seeded
2 tablespoons balsamic vinegar
6 tablespoons olive oil
salt and pepper



Chicken Breasts with Strawberry Avocado Salsa

Cooking time: 25 minutes
Difficulty level: easy
Makes: 4 servings

Instructions
puree half the strawberries, garlic and red pepper with a hand blender and add 2 tablespoons of olive oil to it
cut the remaining strawberries and avocados into cubes and mix them with the strawberry sauce and then leave to marinate
season the chicken on both sides with salt and pepper
heat a frying pan and fry the chicken in the remaining olive oil over medium heat until they are cooked and appear to be golden brown on all sides (8-9 minutes)
turn the fillets over regularly while cooking
serve the chicken with the strawberry avocado salsa
white rice and green vegetables such as broccoli or green beans are a tasty accompaniment for this dish.

My No Recipe Healthy Mediterranean Salad




Just add fresh torn romaine, cucumber, sliced, or chunks, crumbled  or chunks of Turkish feta cheese.
Cherry tomatoes, quartered  or chunks of fresh tomatoes, red onion, thinly sliced or diced.
Little tiny rings of green onions, julienned roasted sweet red peppers, or fresh cut.
Pitted Turkish or Greek (or both) black/green olives, chopped dill, slices of lemon to squeeze on salad. Drizzle with Turkish olive oil....I have no measurements or recipe......enjoy with your entree or alone with bread.....just enjoy it.
